I am converting (slowly) to a vegan 80 percent of the time.
Oh. My. God. It's a total mind shift of how you eat, how you consume protein and realizing how many of the things you currently eat actually fit within the vegan guidelines.
When Door to Door Organics reached for a partnership two months ago, it was like the vegan gods shining down on me and yelling, "Just do it!"
Every week when I received my bitty box, it was full of fresh fruit and vegetables that I could somehow use to manipulate a new recipe. Plus, I could add in quinoa, chia seeds and spices that I needed to make my new dishes.
One of my staples is a green drink of some kind. For two years since I've had my Vitamix, I can't drink enough green protein smoothies. I make some variation of one almost every day, although now I'm enjoying chia pudding with fresh blueberries. The beauty of the bitty box was there was always something new to add in - avocado, celery, cucumber, banana, strawberries and blueberries. I would literally get all Martha and mix in whatever I had to blend a healthy breakfast. Who needs caffeine? Not this girl.
This green juice called for a mix at what I had at the end of my bitty box - a few pieces of cantaloupe, 2 big handfuls of super spinach mix, 1/2 cup of blueberries, almond milk and a handful of ice.

One of the reasons I was able to use all my bitty box was really due to mixing up juices and smoothies each day. It was a simple way to recover after a long run or a hot yoga class with a pretty healthy snack. Need to eat more greens? Try blending them.
